I have to share this amazing appetizer we just had at a restaurant called Skala in Oia, Santorini (we are in Greece at the moment). This amazing dish is only available in Santorini!
It is called a tomato fritter; similar to an apple fritter however this is made with a tomato. Its lightly deep fried, so its light and crispy on the outside, warm, juicy and bursting with flavor on the inside.
