Here is my recipe for Smoked Turkey soup. I haven’t made it in over a year, but I’m going to make a pot tonight:
•Brandt Smoked Turkey Drumstick (1 or 2 depending on the size)
•Can of Cream of Mushroom Soup (1 or 2 cans, your preference)
•Homemade Dumplings (I haven’t mastered homemade dumplings yet. I usually use flour, milk or soup broth, egg maybe, salt, spices, etc.)
Wrap the turkey drumsticks in foil and cook in the oven for about 1 – 1.5 hours at a low temperature (about 300 or so). I am not too concerned about it being overly cooked as it will go into the pot after.
•After turkey is cooked, unwrap and place in a big soup pot.
•Add chopped up potatoes, carrots and can of mushroom soup into pot.
•Fill pot with water.
•Bring to boil and then simmer for an hour and half or two hours.
•Towards maybe the last half hour before your soup is ready to eat, drop your spoonfuls of dumpling mixture into the soup.
I don’t recommend adding any salt, and to get the low salt mushroom soup.
