I made a duck on the weekend for Thanksgiving. I was very scared to make this because I have failed many times in the past where my oven caught on fire due to the fatty duck. So this time, I attempted duck in the Ninja Cooking System. I received very helpful tips from the RFD members.
I marinated the duck with hoisin and soy sauce, lots of garlic and onion. But first I poached the whole duck in boiling water for five minutes to reduce some of the fat. I had also trimmed off some of the fat in advance.
I set the cooker at 325°F and cooked the duck for over an hour and half. I placed water in the bottom of the cooker so there would be some moisture in the duck. Then I placed the duck in the oven for ten minutes.
The end result was the duck had a lot of flavour and very soft. The skin was not crispy but had good flavour. In future, I will lower the cooking time in the Ninja Cooker, and place it longer in the oven. The Ninja cooker was great as there was little mess to clean up, and no splashing in the oven.
